Circello, municipality of Campania in the province of Benevento

This morning, in a greeting from the Kiss Kiss section, we spoke about Circello, a municipality in the Campania region of the city of Benevento, guided by the words of Mayor Gianclaudio Golia.

Chorcelio in the Circellese dialect, it stands on a rocky promontory overlooking the valleys of the Torti and Tammarecchia streams. Its origin can be traced back to ancient times: the possessions of the Samnite Pentri tribe, the territory of Circello were part of Sannio Irpino and, in particular, this area, as the Roman historian Tito Livio recalls, was called “Taurasia”. Then the territories of Upper Sannio were conquered by the Romans at the end of the Samnite Wars, and the territory of Circello became public age belong to the Roman people. Archaeological finds found in the area, and recent excavations carried out in particular in the Macchia area, date back to the Roman period.

• Torre di Sant’Angelo: This is the bell tower of the old parish church of San Michele Arcangelo, destroyed by the Sannio earthquake in 1688. It was built in 1272 using bare materials, in particular a block with a human figure, an unusual piece of early medieval sculpture influenced by memories of the art of the Ligurian Apuans.
• Remains of the Ligurian city of Bebiani in the Macchia region, discovered in 1819 by Giovanni De Agostini on land belonging to him. A few years later, his son Giosue discovered the Tabula Alimentaria dei Liguri Bebiani mentioned above.

Typical dishes and products of Circello

miss Circello: a puff pastry product with a crescent-shaped filling; smooth, shiny surface, golden in color from brushing with egg before cooking; dark yellow interior; dimensions on average 12 x 16 cm (large slippers) for a weight of 300 – 400 grams; an average of 5 x 5 for small misses, weighing up to 100 grams. Shavola has a crispy crust and a soft and moist interior that releases flavors derived from the cheeses used, vaccines of two types: “primo sale senza sale” cheese with very short maturation and medium maturation (5-6 months). It has an intense and persistent taste, but not sharp.

In addition to the basic version, it is available in three versions:

• Dough enriched with rice and sugar;
• Dough enriched with rice;
• Dough with ricotta, rice and candied fruits (citron).

The product is sold by weight, packaged in transparent and sealed food bags.
