There are only two tables in a famous restaurant in Granada and you have to wait for 5 months. What will you eat?

In the center of Granada, especially on Elvira Street, there is a food corner that is sensational in the city: Yama Sushi. The Japanese restaurant is known not only for its unique cuisine, which includes sushi, seafood and Japanese wagyu, but also for its exclusivity, as there are only two tables inside and the waiting list is four to five months long.

The chef behind this successful dish is Xiong Zijian (affectionately known as Eric). Eric, originally from Shanghai, fell in love with Granada thanks to a former colleague who had lived in the city for many years. “I’ve always raved about this place, so I decided to start a new life here,” Eric said. He has been living in Granada for four years and enjoys the sunny environment, fresh air and friendly people. He felt very happy.

For Eric, who has always been passionate about Japanese craftsmanship, Yamazushi Restaurant is a dream come true. Inspired by figures such as the “God of Sushi” Jiro Ono, Eric began to learn the exquisite techniques of sushi and spent one year and four months perfecting his creations.

The restaurant’s success lies not only in its months-long waiting list, but also in their meticulous attention to customers and the quality of their ingredients. At Yama Sushi, the sushi rice is kept at body temperature and it is recommended to eat the nori immediately within 10 seconds of serving to preserve its texture.
